Pancake Day and a Break from Writing

The day before Ash Wednesday is Pancake Day – a perfect excuse to fry up your favorite pancakes and crepes!

Dear friends, first of all I'd like to apologize to everyone who follows my blog, and to those waiting for the roundup of the Pora na Pora II event, for this longer break in writing. Unfortunately, I was forced into it by illness. I'm getting better and better, and I hope that soon I'll have the strength to sit at the keyboard for longer and put together an interesting post with a tasty recipe.

And now, just as a little fun fact, I invite you to celebrate Pancake Day, which falls on today's date. I absolutely love pancakes and all kinds of fritters and crepes, and I only wish I could go into the kitchen and fry up my favorites. All I can do is share with you the recipes I've already put on the blog. It may be too late for breakfast pancakes, but they taste just as good for dinner.

Jamie Oliver's Pancakes, my favorite, fluffy and delicate, and not complicated at all. Perfect with blueberries or maple syrup.

Banana-apple pancakes. My daughters adore them and break records for the number of pancakes eaten. I like them a lot too, by the way. Perfect for a Sunday breakfast, but also for a quick dinner. We like the banana-apple version best, but you can also make them with just one of those fruits.

Buckwheat blini, which make me hungry just thinking about them. Perfect with any topping, sweet or savory.

Orange-vanilla crepes, classic, feather-light crepes, pan-fried, with delicate vanilla farmer's cheese.

Although for me pancakes mean mostly sweet pancakes and crepes, we can't forget the savory version.

Crepes with spinach and chicken are among the favorite crepes not only in my house.

And crepe roll-ups with goat cheese are great for a picnic (which we still have to wait a bit for), a snack, or a second breakfast at work, because you eat them cold.

And finally, a few recipes on Jamie Oliver's website. Some of them look delicious, and not only the sweet ones.

I wish you a happy Pancake Day, and see you next time!

Oh wow, what a choice. Hmm… no, I couldn't pick just one option. I'd want a little bit of each!
