A nasty bug is keeping me from cooking, but luckily I have a few recipes in reserve. It's a shame, really, that I can't spend my time at home on something I enjoy, namely cooking. So today I'm digging into my recipe archive :)
Spelt crepes are perfect if you're watching your waistline, because each one has only 105 kcal. On top of that, this is a vegetarian dish. These roll-ups are great for a picnic (which we still have to wait a little for), a snack, or a lunch to take to work, because you eat them cold.
Light Crepe Roll-Ups with Goat Cheese, Carrot and Poppy Seeds
The recipe comes from the magazine "EatSmarter" 4/2011
Instructions:
Mix the flour with the milk and mineral water. Add 1/2 tsp salt and the eggs, mix, and then set aside for 30 minutes.
Meanwhile, wash and peel the carrot and grate it on the coarse side of a grater. Put it in a bowl, sprinkle with salt, and set aside for 5 minutes.
Wash and dry the basil and pick off the leaves. Set a few aside and finely chop the rest.
Mix the goat cheese with the farmer's cheese, poppy seeds and chopped basil, then add the carrot. Season with salt and pepper.
Heat a pan about 16 cm in diameter and lightly brush it with oil. Pour in 3 tbsp of crepe batter, spread it evenly, and fry. Spread the cheese mixture evenly over the cooked and cooled crepes, sprinkle with the remaining basil leaves, and roll them up.
Enjoy!
