Writing has been hard for me lately. My long to-do list and the weather aren't helping at all. The heat is really hard on me, and I'm glad it has cooled down a bit. Please forgive me if you feel neglected, but this will pass. It definitely will. I only cook on weekends and bake very little, but I still have a few recipes that I want to show you.

Potato Salad with Radishes

Potato salad with radishes is a very light salad. It's great for using up leftover new potatoes from dinner, and it's not complicated at all. It's a wonderful side dish for meat, but it also works well for supper, especially on those days when you just don't feel like cooking.

Instructions - Potato Salad with Radishes:

Combine all the dressing ingredients and stir until you get a smooth dressing.
If you don't have leftover potatoes from dinner, scrub them clean (leave the skins on), boil them, then let them cool and cut them into strips or cubes. Mix them with the dressing you prepared earlier, add the sliced radishes, chopped chives and dill, and toss well.
Enjoy!
