Melt-in-Your-Mouth Chicken and Spinach Crepes

These crepes, in my sis's words, “taste like they're from a good restaurant.” They're tender, creamy and juicy, and vanished from the plates in no time.

Although I've already made these crepes several times, I've been sitting on the recipe for quite a while. Too long. When my family tried them, it was unanimously declared that they belong on my blog. So today, the recipe's prison sentence is over ;)

The recipe comes from Exclusivelyfood.com.au, but I changed it a bit.

Directions:

For the crepes, lightly beat the eggs, add half of the flour and beat until everything is combined. Add the remaining flour and mix until you have a smooth cream. Stirring constantly, add the milk a little at a time and mix until you have a smooth batter. Set aside for about 30 minutes. If any lumps form, you can pour the batter through a sieve.

Heat a pan, grease it lightly with fat and fry the crepes.

Preheat the oven to 200°C (390°F), or 180°C (355°F) if using convection.

In a small amount of fat, sauté the onion, add the chicken pieces, season with salt and pepper and cook until the chicken is done but not browned. Set aside to cool. Alternatively, you can gently stew the chicken with a little water. It will be even more tender.

Mix the remaining ingredients from the filling list, season with salt and pepper and stir in the cooked chicken.

Spread the filling over the middle of each crepe, fold the left and right sides of the crepe toward the center, then roll the crepes up.

Arrange the crepes snugly in a baking dish, seam side down.

Mix the cheese with the cream and spread it over the crepes. Bake for about 25-30 minutes, until the cheese is golden brown. Serve while still hot.

Enjoy!

I'm planning to make them today. They look wonderful, and they probably taste wonderful too, I'll just use whole wheat flour instead of regular flour :) Great site, it opens up so many new possibilities in the kitchen. Greetings

  • flowerekAuthor

Thank you so much. That's very kind of you :) Enjoy, and I'm looking forward to hearing a few words about how they tasted :)

They tasted amazing, curry and spinach is a great combination, I have to admit it was my first time trying it. My fiancé was happy with the dinner, he said he got really full :) . The crepes are very tasty and filling. I'll definitely make them again. I'll definitely try your other recipes on this site too, because they look just as delicious as these crepes Warm greetings

I made these crepes today and they turned out delicious! I just used a lot more spinach, because everyone at my house is a spinach lover ;) Greetings, and I'm looking forward to more recipes with spinach!

…and four more cloves of garlic in the filling :)

  • flowerekAuthor

I'm glad you liked them. It was probably very garlicky, but I like it that way too :) I'll try to come up with more recipes with spinach, and in the meantime I recommend spinach cannelloni http://flowerek.com/warzywa/cannelloni-z-nadzieniem-szpinakowo-serowym/

Basia, this dish just melts in your mouth. I also have two kids, and I have to work up a sweat to feed them healthy. Kids are the most demanding customers of our home kitchen. But with this dish I hit the bullseye. The crepes disappeared, and my 5-year-old daughter asked for them for dinner and again the next day. Thank you for this recipe. And please keep them coming. I love your blog, the recipes are easy and fit any budget. My son's communion is in a few weeks and I keep fine-tuning the menu, could you recommend something? A reply to my email address would be welcome. Greetings, Monika

  • flowerekAuthor

Thank you so much for such kind words :) My kids like these crepes too :) As for the communion menu, I'd be happy to help. I'll get in touch by email soon.

I'm just starting out with cooking and I have a question about the broth: what's the easiest way to make it, or can it be replaced with something?

  • flowerekAuthor

It's best to make the broth yourself, and it's not complicated. You can strain any extra and freeze it (e.g. in ice cube bags). I posted a recipe for a simple broth here: http://flowerek.com/roznosci/produkty-podstawowe/wywar-do-zupy/ Enjoy! :)
