While looking for new ideas for a herring salad, I came across this one. It suited me really well, because I happened to have a jar of pickled pearl onions that needed using up. It's also a simple, quick herring salad, and quite hearty at that. Despite the potatoes it's light, and the cucumber and pickled onions add freshness. It's good for any party, including as a dish for New Year's Eve.

Directions:
Cut the herring into small strips. Peel the apple, cucumber and potatoes and cut them into a small dice. Boil the eggs, peel them, and then cut them into half-slices. Drain the onions and mushrooms and cut them in half or chop them. Gently mix all the ingredients together.
Make a dressing from the mustard, sugar, pepper, nutmeg, wine vinegar and olive oil, and then pour it over the salad. Mix, garnish and serve.
Enjoy!
