The weekend came and went. I hope you had some sunny days. Spring is in full swing here, with sun, rain and thunderstorms :) On the bright side, kohlrabi and strawberries are growing in my garden, and the lettuce is already poking out its little green leaves :) I'm already so excited :)
My recipe today is maybe a little less springlike, but herring season seems to last all year long. At least in my house. We like to treat ourselves to a little herring every now and then :) Herring with curry sauce looks great as an appetizer or so-called finger food. I really like the combination of herring with apple and cinnamon, and even though it might sound strange to some, it truly works very well. The sauce is quite spicy, so if you're sensitive to heat, I recommend trying just a little first.
Herring with Curry Sauce
Directions:
Cut the fillets into smaller pieces. Peel the apples, slice them, and sprinkle with lemon juice. Season with cinnamon to taste and gently cook in hot butter. Set aside.
Blend all the sauce ingredients together, then season to taste. Arrange the fillets on top of the apples and pour the sauce over them. Garnish with dill and serve.
Enjoy!
Additional notes:
If the fillets are large, you can serve them rolled up on a piece of apple, drizzled with the sauce and garnished with a sprig of dill.

It looks nothing like herring :)
It looks that way because I usually buy matjas soaked in beets or red wine :)
