Do you like weddings? I do. I love to dance, and I love it when there's good food at a wedding. Cakes get most of my attention. I just got back from a wedding with tables loaded with delicious food and cakes. Oh, it was so good. After all those treats, all we wanted for dinner was something light.
Salmon Appetizer
My recipe today is perfect for just such a light dinner. It's also a great appetizer or finger food for parties. That's exactly how Monika used it, and she's the one who sent me this recipe. Thank you again, Monika, for your very kind emails and interesting recipe ideas.
Directions:
Peel the cucumber and chop it finely. Wash the dill and chop it finely as well. Add both to the quark, season with salt and pepper if you like, and mix. If the mixture is too thick, add cream until you get the right consistency.
Lay out the salmon slices and spread the cheese mixture on them. Roll them up and place each one on a piece of fresh ciabatta or baguette. Garnish with a sprig of dill and serve.
Enjoy!
Additional notes:
I also add chives to the cheese mixture, which gives the flavor a little extra kick.
