Ingredients

In the original recipe, this salad is served with grilled halloumi. Unfortunately, I couldn't get any, so I replaced it with firm feta. There's really only one thing I can say about this salad: YUM! I couldn't get enough of it, and I came this close to eating the whole thing by myself. Instead of halloumi or feta, you can also use goat cheese.

I recommend it for a summer dinner with a delicious baguette, or as an appetizer.

Grilled Peach and Feta Salad

Directions - Grilled Peach and Feta Salad:

Wash and dry the salad greens. Whisk the vinegar with a pinch of the sugar, 5 tbsp of the olive oil and the yogurt, then season with salt and pepper.

Wash the peaches, cut them in half and remove the pits. Wash and dry the thyme and pull off the leaves, then toss the peaches with the thyme leaves, 2 tbsp of the olive oil and the remaining sugar. Heat a pan (ideally a grill pan) over high heat and cook the peach halves on both sides until golden. Transfer them to a paper towel.

Pour the remaining olive oil into the pan. Cut the cheese into thick slices and fry them until browned. You can cook the peaches and the cheese at the same time by using two pans.

Arrange the salad greens on a platter, top with the cheese and peaches, drizzle with the dressing and serve.

Enjoy!
