Foil-Baked Salmon with Zucchini

Easy salmon steaks baked in foil with diced zucchini, lemon and fresh dill. A simple, quick and tasty fish dinner.

Welcome back after the weekend. It was a busy one for me, very busy. I hope you got to rest and enjoy the first snow.

I like fish, my kids like fish, and my husband likes fish even more, so more than once I'll be showing you what kind of fish ends up on my plate. They're not always fancy dishes, but that's exactly what's great about fish. You can make it simply, quickly and deliciously.

salmon with zucchini baked in foil

Ingredients:

  • 2 salmon steaks
  • salt
  • pepper
  • lemon
  • a little olive oil
  • 3-4 tbsp chopped dill
  • 1 small zucchini

Rinse the fish and pat it dry with a paper towel. Season with salt and pepper and sprinkle with lemon juice. You can leave a slice of lemon on top of the fish. Chop the dill.

Lightly oil two large pieces of aluminum foil. Place a salmon steak in the middle of each piece and sprinkle with the chopped dill. Then cut the zucchini into small dice and put it on top of the fish. Bring two opposite sides of the foil together and fold them over. Then roll up the remaining two sides so the fish is in a tightly sealed "envelope."

Put the fish in a preheated oven and bake for about 20-30 minutes at 200°C (390°F), depending on the size of the fish. About 10 minutes before the end of baking, you can cut open the foil and fold it back slightly.

I serve the fish in the foil just as it was baked. If it's meant to be a dinner dish, you can serve it with duchess potatoes or potato balls.

Enjoy!
