A wonderful side dish for fish and any kind of meat. My daughters like them just as much simply eaten out of hand as a snack.
They are soft and delicate.
potato balls
Recipe from "Kuchnia Polska" (Polish Cuisine), published by Reader's Digest
Ingredients:
- 800 g potatoes
- 2 eggs
- 4 tbsp all-purpose flour
- a little sugar, to taste
- nutmeg
- salt
- pepper
- fat for frying, preferably clarified butter
Wash the potatoes and boil them in their skins in salted water. Peel them and put them through a grinder or a potato ricer (it's important that they are very finely ground, so just mashing them with a fork, for example, won't be enough).
Add the eggs and seasonings to taste, mix, and shape small balls in your hands. Roll them in flour and fry in hot fat until golden.
Tips:
Instead of balls, you can shape them into elongated croquettes.
