I like, I like, oh how I like long weekends. I can calmly catch up on overdue housework and still have time for my family and for sweet laziness. I'm also happy that I finally have time to cook and taste :)

Fish Sticks and Cucumber Salad

Fish sticks are a well-known and well-loved dish. They're a hit mainly with kids, but adults like them too. Unfortunately, store-bought fish sticks contain more breading and other additives than fish. It's nicer and tastier to make them yourself at home. You don't need half the day for it. Together with the salad, they take about 30-45 minutes to make, so still fairly quick. If we skip the salad, dinner is ready in half an hour. Served with cucumber salad and mashed potatoes or potato balls, or even fries (homemade, of course :)), they make a delicious dinner for the whole family.

Fish Sticks and Cucumber Salad

Directions:

First, I suggest making the cucumber salad. Peel the cucumbers and slice them paper-thin, then salt them lightly, transfer to a colander and set aside for about 15 minutes so they release their water. In the meantime, peel the onion and cut it into a fine dice, then mix it with the vinegar, honey, salt, pepper and grapeseed oil. Pour the dressing over the cucumbers, add the finely chopped dill and toss.

While the salad is letting its flavors meld, rinse the fish and pat it dry with a paper towel. Cut it into strips about 2 cm wide, season with salt and pepper and dust lightly with flour. Prepare 2 plates: on the first plate, mix the sesame seeds with the breadcrumbs, and on the second, beat the egg and add a little salt. Dip the pieces of fish in the egg, then in the sesame mixture, and press down lightly. Heat canola oil in a skillet and fry the fish sticks over medium heat on each side until golden brown, then set them on a paper towel for a moment. Serve with the cucumber salad.

Enjoy!

Additional notes:

  • I served the fish sticks with mashed potatoes. I also recommend roasted potatoes with rosemary, potato balls or duchess potatoes.
  • I also recommend another alternative to fish sticks, namely fish cutlets.

Oh, yes. And they're really so much tastier than the store-bought fish sticks.
