A simple fruit cake with delicious rhubarb and, I think, even more delicious raspberries. Simple, quick and, most importantly, tasty :) The ground almonds make the cake more tender, and I also have the feeling that it stays fresh longer.

Rhubarb Raspberry Cake
Instructions:
Separate the egg whites from the yolks. Beat the whites until stiff. Combine the yolks with the butter, sugar and salt and cream until fluffy. Add the flour, potato starch, almonds and baking powder and mix. Add the beaten egg whites and gently fold them in. If the batter is too thick, you can add a little milk. Line a 20x30 cm baking pan with parchment paper and pour the batter into it.
Preheat the oven to 180°C (350°F).
Wash and peel the rhubarb, then cut it into 1 cm pieces. Arrange it densely on the batter together with the raspberries and bake for about 45 minutes.
Enjoy!
Additional notes:
- out of season you can use frozen raspberries, but don't thaw them, so they don't fall apart during baking
- you can skip the almonds and increase the flour to 200 g
- you can also add grated lemon zest to the batter, which I skipped

Dear Basia, I just found your site and I'm enchanted! The recipes are so homey and they look delicious. I miss rhubarb so much, but it's still nowhere to be found here :( but I'm adding the recipe to my "favorites" so I won't forget it for when those wonderful stalks finally end up in my kitchen. Best wishes, Crust&Dust
Thank you so much for the kind words :) This cake is one of a kind with rhubarb, but I think it would be delicious with any fruit. Sunny greetings :)
Time to kick off the May long weekend! With your cake it's going to be a hundred percent successful ;]
Great cake, too bad I haven't found any rhubarb yet, because this cake is really tempting me
Karmelitko, oh yes, the May long weekend has started out really tasty and sunny :) Zauberi, I'm sure the rhubarb will show up soon. Warm greetings to you both :)
I'm not good at baking cakes, but this looks simple. Unfortunately I don't have any almonds, can it be made without them too?
I think you can skip the almonds. In that case you should increase the flour to 200 g.
mmmmmmmmmmmmm :)
I love rhubarb! It will definitely show up in my home baking more than once :) This cake is gorgeous :)
It's been so long since I had rhubarb. I'm jealous of this cake ;)
Beautiful, tempting, wonderful! Deliciously put-together flavors! I love rhubarb, I love raspberries!
Thanks again for the kind words :)
Cakes like this are delicious! :) Thank you for taking part in the event!
Very appetizing! Mmm.
I was just looking for a new rhubarb cake recipe, because I'm tired of the ones I have. Your cake looks delicious. On Saturday I'm going to my granddaughter's birthday party (her 27th!) and I'll bake this cake for her!
