Making muffins is a little challenge of mine. I don't love them madly. I like them, but I can do without them. Still, every now and then I try new recipes in search of the perfect muffin. I need a few tried-and-true recipes because of my kids, who like them very much. On top of that, muffins are a quick "something sweet" to take along and for kids' birthday parties. At parties like that, they are the first thing to disappear. So I have no choice, and I bake.
Chocolate walnut muffins with dulce de leche filling
Recently I made chocolate muffins and banana muffins, but I haven't had time to post the recipe yet. Yesterday, though, I decided to experiment in the kitchen on my own, and the muffins turned out just the way I like them. In fact, they were devoured in no time, almost paper liner and all :) They may be a bit more work than regular muffins, but they have everything I love in them.

Besides, as barbaras-kochbuch, I'm taking part in Zorra's event, where you can win Kicia. Please keep your fingers crossed that the muffins will be liked, because I like the red KA sooooo much :)
Chocolate walnut muffins with dulce de leche filling
Directions:
Preheat the oven to 180°C (350°F).
Mix the flour with the baking powder, baking soda, chocolate, salt and cocoa. Mix the butter, sugar and egg together until everything is well combined. Add the vanilla extract, zucchini and buttermilk and mix until the ingredients come together again. At the end, add the flour mixture and the finely chopped walnuts.
Divide the batter evenly (filling the cups at least 2/3 full) among greased and floured muffin cups (I use silicone ones, which I don't grease anymore) and bake for about 20-25 minutes. After about 20 minutes, check with a toothpick to see if it comes out dry. If not, bake a little longer.
Take the muffins out of the oven and leave them in the cups for another 3-5 minutes, then remove them and let them cool on a wire rack.
While the muffins are cooling (or even earlier), pour the condensed milk into a saucepan and heat it over low heat, stirring constantly, until the milk darkens and thickens to the consistency of liquid honey.
With a sharp knife, cut out the center of each muffin, making a small hole. Pour the dulce de leche into the hole and spread some on top of the muffin as well. Finally, decorate each muffin with a walnut half.
Enjoy!
