Right after jam, this is another brilliant combination of strawberry and rhubarb. Tasty, easy to make, light and healthy. With a little ice added, this smoothie is perfect for hot days.
rhubarb-strawberry smoothie
The recipe comes from the magazine "EatSmarter" 3/2011.
Ingredients:
(for 1 serving)
- 100 g strawberries
- 1 small lime (organic)
- 2 tbsp low-fat quark (cheesecake-type)
- 100 ml unsweetened rhubarb juice (I used strained rhubarb compote)
- liquid sweetener (optional)
- ice cubes (optional)
Wash and dry the strawberries. Set one aside for garnish. Cut the rest into quarters and put them in a blender. Wash and dry the lime, grate the zest onto a small plate, then cut the lime in half. Rub the rim of the glass with it, then dip the rim into the zest. Squeeze out 2 tbsp of juice and add it to the strawberries. Add the quark and the rhubarb juice and blend well. Sweeten with the sweetener if you like and pour into the glass. Make a small slit in the reserved strawberry and set it on the rim of the glass. Serve with ice.
Enjoy!

I put away these smoothies by the ton during strawberry season :D You just can't resist them!
Arven, so true. You can't resist them, especially now during strawberry season.
I'm constantly munching on strawberries and strawberry smoothies too. With rhubarb it's probably even more refreshing!
So true – strawberries and rhubarb really go well together! I've got them around nonstop right now too: either solo or as a duo ;) This smoothie has such a pretty color!
Warm regards!
