Summer, sun and heat. How I dislike hot weather… What I do love, though, are warm evenings, when you can sit with your family or friends and just talk. Often the grill heats up quickly on such occasions, and a lovely get-together is ready to go. But more and more people (myself included) are giving up grilled meat. So I'm looking for new, meatless recipes to make those evenings even nicer. I'm all the happier about recipes that I know I'll be making again and again. And I'm even happier if they're recipes that work practically all year round, like this Feta with Grilled Vegetables, because it's made in a grill pan. Of course, you can also make it on the grill, using an aluminum tray.
Feta with Grilled Vegetables
Instructions - Feta with Grilled Vegetables:
Wash the bell peppers and cut them into strips, peel the onion and slice it as well. Mix the olive oil with the salt, pepper and honey, then toss it with the peppers and onion. Marinate for 10 minutes, then fry in a grill pan over medium heat. Cut the feta in half. Cut the zucchini lengthwise into thin strips (using a vegetable peeler) and wrap the strips around the feta. You can grill the rest of the zucchini too. Brush the feta with olive oil and fry for 1-2 minutes on each side. Serve with the vegetables and basil pesto.
Enjoy!
