Today I'm sharing a dish that's not exactly autumnal, but it is simple! Lately I feel like I have less and less time, even though that's not really true. I think it's the fall getting to me, and I just have to get used to these short, dark, chilly days. On days like these I'm happiest when I can quickly whip up something that my girls will enjoy, too. They love these poultry meatballs in cheese sauce served with spätzle. With a good side salad, it's perfect for dinner.

Before I get to the recipe, one more little reminder. IT'S GINGERBREAD COOKIE TIME! It's high time to make the dough for Aganiok's gingerbread cookies, and for other treats as well. I'll be getting to the kneading this weekend, too. Yum :)

Instructions - Poultry Meatballs in Cheese Sauce:

Finely chop the onion and sauté it.

Mix all the meatball ingredients together, adding the flour or more oat bran if needed to get the right consistency, and shape into meatballs. Heat the oil in a skillet and fry the meatballs, gently turning them from time to time. When the meatballs are done, pour the cream over them, heat it up, add the shredded mozzarella and stir gently until the cheese melts into the cream. Season to taste, sprinkle in the chopped chives and serve, preferably with spätzle.

Enjoy!

Did you pan-fry the spätzle, or do they just come out that color?

  • flowerekAuthor

They're naturally that yellowish color, but I did pan-fry them a bit too.

For me this is the perfect fall dish :) I've been a fan of meatballs since I was a kid ;)

I love meatballs too. My mom made them in all kinds of ways :)

Great recipe. But I'm wondering what spätzle are? Can you buy them ready-made?

  • flowerekAuthor

Spätzle are dumplings that you drop into water, very popular in Germany. You can buy them ready-made here, but they're easy to make yourself. I haven't posted a recipe yet, but there's one, for example, at Basia's: http://mozaikazycia.blogspot.de/2013/09/spatzle-galuska.html

I made this dish for Sunday dinner, and I can confirm it's perfect, tasty, and the meatballs are so tender. I bought ready-made spätzle at Lidl, and they're relatively cheap. Highly recommend!
