The weekend is just around the corner, and some of you are already relaxing, so it's good to have a tasty recipe up your sleeve. Let me share my latest experiment, which luckily turned out well. I was in the mood for a lemony apple cake (jabłecznik), covered with a layer of cake and lots of icing, just like I remember from my childhood. I have to admit, the taste brought back old times. The cake came out tender, with lots of apples and a soft crumb. The only thing I'll change next time is the amount of batter or the size of the pan. The cake turned out a bit too thick for me, so next time I'll spread it in a larger pan. This time I used a 26 cm springform pan.

Lemon Apple Cake

For this recipe I used the dough from my lemon cake recipe, which I also highly recommend.

Lemon Apple Cake

Instructions - Lemon Apple Cake:

Preheat the oven to 180°C (350°F).
Beat the eggs, sugar and vanilla sugar until fluffy. Add the butter and the finely chopped zest of 1 lemon and keep beating for a moment, then add the flour sifted with the baking powder and mix gently. Line a pan about 26 cm in diameter or larger (depending on how thick you want the cake) with parchment paper and pour half of the batter into it. Bake on the middle rack for about 25-30 minutes, or until the cake turns a deep golden color.

While the cake is baking, prepare the apples. Peel them, cut some of them into cubes and simmer in a pot until they cook down a bit. Grate the rest of the apples on the large holes of a grater and add them to the ones in the pot. Add the lemon juice and zest and the vanilla sugar. Finally, mix in the pudding powder.

Once the cake is partly baked, spread the apples over it. Pour the remaining batter on top and bake for another 30 minutes, or until the top layer is completely baked through. Take it out of the oven.

Mix the powdered sugar with the lemon juice and spread the icing over the lukewarm cake.

Enjoy!

Maybe I'll bake one tomorrow too, a small one for two. It looks really appetizing. I've never baked one like this before.
