A few days ago I got the latest issue of Jamie Oliver's magazine, and this recipe caught my eye right away. I knew I had to try it, I absolutely had to! I know, I know. Jamie Oliver again, but I really can't help myself when I see recipes with photos that make me drool :D

The cake is moist, fragrant, nutty, and perfect with coffee or tea.

As I mentioned, the recipe comes from Jamie Oliver's magazine "Jamie," 09/10 2011. I made a few changes, though. I reduced the amount of sugar, and instead of the almonds used in the original, I used hazelnuts. I'm sharing the recipe with my changes. You can find the original recipe HERE.

Instructions:

Cut each plum half in half again.

Prepare the topping. Grease a 23 cm springform pan with butter. Melt the remaining butter, add the sugar, and stir for about 2-3 minutes. Once the sugar has combined with the butter, take the pot off the burner and keep stirring. Spread the mixture in the pan and arrange the plums on top.

Preheat the oven to 180°C (350°F). Cream the butter from the cake ingredients with the sugar until fluffy. Add the eggs one at a time. Then add the hazelnuts, baking powder, salt, and vanilla sugar, and finally fold in the flour and add the sliced almonds. Pour the batter over the plums, set the pan on a baking sheet (it may leak out of the pan while baking), and bake for 1 hour (ideally 10 minutes longer), until the cake is nicely browned. After that, leave the cake in the pan for a few minutes, run a knife around the edge of the pan, and turn the cake out onto a plate or a springform pan, flipping it upside down so the plums end up on top. If the cake still seems too loose, you can leave it in the pan a little longer.

Enjoy!

    I'm not at all surprised you couldn't resist this recipe, I'm exactly the same :) I'll buy some plums and bake it too.
    Hugs :)

    Was there also 100g of almonds in the original recipe? The same amount as the nuts you used?
    You're right, the cake really invites you to snack on it :-)

    @Basiku, I'm glad, and enjoy the snacking :) Hugs :)
    @Magdalena, there was exactly the same amount of almonds. I just swapped them for walnuts. I already put a link to Jamie's original recipe in the post if you feel like comparing.
    @Asieja, thank you :)
    @Usagi, it's really worth it. My M. said he doesn't want any other plum cake anymore ;)
