Finally! I have strawberries from my area at last, and I can eat as many as I want :) At first, of course, I just ate them fresh, plain, because that's when they're the best. But slowly I'm starting to use them in desserts, too.
The easiest dessert, and for years the tastiest, is strawberries in a cup "mushed up" with cream and sugar. I still love it to this day :) I remember how happy I was as a kid about a little cup like that, and how I waited for Mom or Dad to make it for me :) Unforgettable memories. By the way, I hope my kids will also remember little things like that someday :)
Strawberry Roll
And today, as a grown-up and serious ;) person, it's time for a slightly more "complicated" dessert (although this one is childishly simple). Strawberries and whipped cream are a perfect combination. Rolled up in a delicate sponge cake, they make a delicious dessert for guests that's not so ordinary anymore. This time it was served by my mother-in-law.
Strawberry Roll
P.S. In the photo the roll is decorated with raspberries, but it's made with strawberries. I had run out of strawberries for the decoration :)
Instructions:
Preheat the oven to 200°C (390°F). Separate the eggs and beat the whites with a pinch of salt until stiff. Beat the yolks with 3 tbsp water and 75 g sugar until fluffy, then gently fold in the egg whites, followed by the flour. Line a baking sheet of about 20x30 cm with parchment paper and pour the batter onto it. Bake for about 10 minutes, then turn it out, paper side up, onto a clean kitchen towel sprinkled with powdered sugar and gently peel off the paper. Let it cool.
Whip the cream until stiff with the remaining sugar and grated lemon zest, then set it aside in a cool place. Wash the strawberries and remove the stems. Set a few aside for decoration and dice the rest, then mix them into the cream. Spread 2/3 of the cream evenly over the sponge and roll it up. Decorate the roll with the remaining cream and arrange the remaining strawberries on top.
Enjoy!
Additional notes:
- Instead of strawberries, you can use raspberries or canned peaches
- To make it a bit lighter, use a cream substitute product
