Ingredients

Most of us think of muffins as something sweet, but savory muffins taste just as good. They are a perfect snack for in between meals and a great picnic dish. They also work well as finger food at stand-up parties.

I made these muffins the day before we ate them, for a trip with the kids. They still tasted like they had just come out of the oven, moist and slightly sweet thanks to the bell pepper.

The recipe comes from a supplement to the newspaper "Gazeta" – "Kulinarny atlas świata – piknik" ("Culinary Atlas of the World – Picnic").

Directions:

Brush the bell pepper with olive oil and roast it in the oven at 180°C (350°F) for about 30 minutes, until the skin starts to loosen or turns black. Take it out of the oven and put it into cold salted water. Remove it from the water, cut out the seed core, peel off the skin, and chop the flesh.

Sift the flour into a large bowl, add the baking powder, salt, chopped bell pepper and crumbled feta, and mix. Whisk the eggs with the milk and add them to the flour, then add the melted butter as well. Stir with a spoon just until the ingredients come together (don't mix for too long, so the batter doesn't get too lumpy). Grease the muffin pan with fat* and fill each cup ¾ full with the batter. Bake in an oven preheated to 210°C (410°F) for about 20 minutes, or until a toothpick comes out clean. After baking, leave the muffins in the pan for 5 minutes, then remove them and place them on a wire rack to cool.

Enjoy!

Additional notes:

I also recommend trying a version with olives and Parmesan instead of bell pepper and feta.

*I use silicone muffin cups. They don't need to be greased and they are easier to wash.

I also recommend the other muffins published on my blog.

I've never had muffins that weren't sweet, I wonder what that combination tastes like

I've made these before – they're delicious! Highly recommend :)

This is the first recipe I tried from your site. I have to admit, the muffins are delicious. I trusted you, so now I'm moving on to the other recipes ;-))) Maybe you have a suggestion for what I absolutely must try?

Thank you so much for the kind words :) What do I recommend? Basically, all the dishes on the blog are ones I recommend. Among the sweets, though, I recommend the rafaello, the oponki and pączki, the tarts and the cookies. Among the starchy dishes, the pancakes and blini. The gnocchi and crepes are also delicious, as are the milk crescent rolls and the buns :) For meat dishes, the chicken and the roasts. Green salads, soups :) Oh, and the cannelloni too. It's hard for me to pick the best ones.

Can I add some other vegetable instead of the bell pepper? Could you suggest something? I was thinking about green olives, is that a good idea? :)

Olives will go with it perfectly. I'd combine them with some of your favorite herbs. Sun-dried tomatoes with feta would work too.
