Fish, with a little twist. This time I invite you to try a delicious, quick and easy-to-make fish dish. Indian-style cod in tomato coconut sauce is very tender and fragrant, thanks to the delicious tomato coconut sauce it simmers in.
I got this recipe from a book that I inherited by chance from a neighbor who was moving out. When I took it from her, I thought, well, sure, I'll take it, maybe it's worth it, but Indian cuisine… eh, not really. I don't know how true this book is to authentic Indian cooking, but I'm glad I have it, because it lets me get a little closer to a cuisine that was completely unknown to me until now.

Indian-style cod in tomato coconut sauce
Do you have any treasures like that at home?
Directions – Indian-Style Cod in Tomato Coconut Sauce:
Chop the onion and the bell pepper. Press the garlic.
Rinse the fish, pat it dry, and season with salt and pepper. Heat the oil in a pan and sear the fish on each side until it turns golden. Don't cook it all the way through yet. Remove it from the pan and set aside.
Add the onion, garlic, bell pepper and all the spices to the pan and cook them over low heat, stirring, for about 2 minutes. Add the tomatoes, bring to a boil, and simmer gently for another 5 minutes. Add the coconut milk and the chopped cilantro leaves and stir. Finally, place the seared fish on top of the sauce, cover, and simmer over low heat for about 8 minutes, being careful that the cod doesn't fall apart. Adjust the seasoning if needed and serve. We enjoyed it with brown rice and bulgur.
Enjoy!

I can just imagine the combination: fish, coconut milk, tomatoes and aromatic spices… a great dish!
Looks great and I'm sure it tastes delicious. One small technical note: cumin is not "koper rzymski", it's "kmin rzymski" (not to be confused with "koper włoski" – fennel).
