This is one of my favorite herring salads. It's a perfect addition to the holiday menu, but it's also great for any other herring occasion.
Even people who don't really like herring enjoy it, because besides the herring there are lots of other goodies in it.
This salad tastes best the next day, so you can make it ahead and save yourself some work on the day of the Christmas Eve supper. Besides, it's really simple to make. I just have to warn you that it makes quite a lot. It's enough for about 6 people, or even more.
The recipe, slightly modified by me, was shared by iwonaweiss on Mniammniam.com.
Made without mayonnaise, or with the mayonnaise replaced by plain yogurt, this salad is suitable for those on the Dukan diet.
Note: For herring salads I usually use herring that is already filleted and soaked. If you use a different kind, you need to soak it well to get rid of the salt.
Layered herring salad, Herring under a featherbed
How to make the layered salad:
Cook the potatoes, carrots and beets in salted water, then let them cool and peel them. Next, grate them on the large holes of a grater. Peel the apple, too, and grate it.
Cut the herring into small pieces (so that it's easy to eat). Dice the onion, and chop the leek and the dill pickles. Hard-boil the eggs.
Once all the ingredients are ready, you can start building the layers. A clear, narrow, tall dish works best, so you can see all the layers of the salad.
Herring under a featherbed
And the layers go like this:
Put the herring on the bottom, then season with salt and pepper. Spread with mustard.
Add the onion, beets and dill pickles, season, and spread with mayonnaise.
Add a layer of potatoes, season, and spread with mayonnaise as well.
Add the carrots, season, and cover with a layer of mayonnaise.
Add the leek and apple, season, and spread with mayonnaise.
On the very top, grate the whole eggs (or chop them finely) and sprinkle over the salad.
Finally, you can spread a little more mayonnaise over the whole thing.
Chill the salad before serving. Serve it so that each portion includes all the layers of the salad.
Enjoy!

This salad is going to have a spot on my table this holiday season :))
That makes me so happy. So I wish you a delicious holiday!
Basia, Can I use pickled herring for this salad, like Bismarck herring? Or does it have to be matjas?
I honestly can't say, because I've never made it with pickled herring. I just have a hard time picturing vinegar combined with mayonnaise in a salad. Maybe make a smaller, "poorer" batch first to test it out?
Thank you ;-) I'll give it a try, because I really like this salad, and nobody around here eats matjas – we don't like it…
