I make this salad quite often because it's simple and tasty. It's a great, quick way to use up herring fillets that sometimes linger in the fridge. The pickles give the salad a little tang or bite (depending on the pickles you use), the apple adds sweetness, and the egg makes the salad delicate and a bit creamy.
Note: For herring salads I usually use herring that is already filleted and soaked. If you use another kind, soak it well to get rid of the salt.
This is my own recipe.
herring salad
Instructions:
Cut the matjas into bite-size pieces. Finely dice the pickles. Peel the apple and cut it into small pieces, or grate it on the large holes of a box grater. Peel the eggs and cut them into large dice. Add the mayonnaise and mustard, season, and mix everything together. Chop the scallion and sprinkle it over the salad.
Enjoy!
