Here is another idea for your Easter table. It's a small dish/appetizer that is simple and quick to make and perfect for Easter breakfast. What's more, it's great for those who are on the Dukan diet.
Of course, I'm adding this dish to my collection of Easter recipes.
Eggs stuffed with salmon spread
Since I ended up with more spread than would fit into the eggs, I used the rest to make little pumpernickel sandwiches, which I decorated with caviar. They turned out to be another very tasty and quick appetizer.
Pumpernickel with salmon spread
Directions:
Hard-boil the eggs, then peel them. Cut off the narrower end of each egg so you can take out the yolk. Chop the salmon very finely. Put the yolks, salmon and horseradish in a bowl, then mash them with a fork, adding as much sour cream or yogurt as needed to make a delicate, creamy spread. Season with pepper and horseradish if you like, then, using a pastry bag, fill the eggs with the filling. Garnish with a cornichon or caviar (I used spicy krokodylki (little crocodiles)) and serve.
Enjoy!

Very interesting idea! Until now I've always made the egg filling with mackerel, but this one is definitely right up my alley, I have to try it :-)
And I've never stuffed eggs with mackerel before ;)
How many eggs (for stuffing) does this paste make enough for? I need about 7-9 eggs. Will this amount of paste be enough, or should I make a double batch?
It was enough for 5 eggs for me. It also depends on how big the eggs are. I'd recommend making a double batch, though. You can use the leftovers for little sandwiches or as a side with crackers.
Really nice recipe.
Thank you, and I encourage you to give it a try :)
