This dessert came about spontaneously. I had no dessert on hand, but we really craved something sweet, and it had to come together as quickly as possible. I recommend it to all rhubarb fans. It was hard to stop myself from eating a second serving.
Rhubarb and raspberry dessert in a cup
Directions:
Wash and peel the rhubarb, then cut it into 1 cm pieces. Place it in a saucepan, pour in 3 tbsp water, and add the brown sugar and raspberries. Stew for 5 minutes, then remove the lid and cook, stirring, until you get a thick compote. Let it cool.
Mix the mascarpone with the yogurt until you get a smooth cream. Add the vanilla sugar and sugar to taste (I used about 1 tbsp). It doesn't need much, since the syrup is quite sweet.
Layer the compote, ladyfingers and mascarpone cream in a cup, finishing with a layer of compote.
Enjoy!
Additional notes:
- you can use strawberries instead of raspberries
I'm submitting this recipe to the rhubarb event.

The best thing for hot weather is a super rhubarb-y dessert to cool you down ;]
Really nice dessert, I'd love to eat this since I adore rhubarb. It's great that the mascarpone is lightened up a bit with the yogurt.
My mouth is watering. Wonderful, quick and tasty
I still have a little bit of raspberries, and there's rhubarb in the garden, so I guess nothing's stopping me from making this dessert.
Oh yes Karmelitka, that's true. Rhubarb is perfect for hot weather.
Hania-Kasia, thanks to the yogurt this dessert is a lot lighter.
Kulinarne smaki, thank you.
Basia, I envy you the rhubarb in your garden. Enjoy! :)

Sylwia, thank you. Oh, it's a very enjoyable hobby :)
I've never had it with rhubarb, I didn't even think you could combine it with raspberries in such a delicious way. I often blend raspberries with raspberry-flavored syrup and ice and gently pour it into thick yogurt. It looks great.
Everyone at our house really likes raspberry syrup with lemon or raspberry with linden. I always had a lot of rhubarb and didn't know what you could make with it besides a cake. I'd love to try this as soon as it's in season.
