Chicken Fillets in Parma Ham on a Bed of Vegetables

Chicken breast fillets wrapped in Parma ham and braised on colorful vegetables. An easy dish that looks fancy and works for the Dukan diet.

Poultry is probably the meat we eat most often at my house. You can prepare it in so many ways. Cooked well, it's so tender that even kids eat it with gusto, which is no small thing.

The ingredient list for the dish I'm sharing today is quite long, and the recipe may seem complicated, but it really isn't! All you have to do is prepare the vegetables, and the rest pretty much takes care of itself. I love the colors that end up on the plate with this dish!

My mom sent me this recipe. I don't know its exact source.

These fillets are a tasty dish for anyone on the Dukan diet. Just replace the wine with broth.

chicken fillets in Parma ham on a bed of vegetables

Ingredients:

  • 4 chicken breast fillets
  • 4 tbsp olive oil
  • 1 tsp dried rosemary
  • salt
  • hot paprika
  • 8 thin slices of dry-cured ham, e.g. Parma ham (prosciutto) or Black Forest ham
  • 1 clove garlic
  • 1 onion
  • 3 celery stalks
  • 3 carrots
  • 2 small zucchini
  • 1 red bell pepper
  • 1 tbsp tomato paste
  • ½ cup dry white wine
  • 2 tbsp olive oil
  • 1 tsp grated lemon zest
  • 1 tbsp chopped fresh parsley

Rinse the fillets and pat them dry. Sauté them in olive oil until golden. Take them out of the pan and sprinkle with rosemary, salt and hot paprika. Then wrap each piece of chicken in 2 slices of ham.

Peel the garlic and onion and dice them. Cut the carrots, celery, bell pepper and zucchini into matchsticks. Mix the tomato paste with the wine. Sauté the onion and garlic in 2 tbsp olive oil until translucent, add the vegetables cut into sticks and fry briefly. Then pour in the tomato paste and wine mixture and add the cut bell pepper.

Place the fillets on top of the vegetables and simmer over low heat, covered, for about 15 minutes. After that time, take the fillets out again and add the lemon zest and parsley. Arrange the vegetables on a plate and place the fillets on top.

Additional information:

You can use broth instead of wine.
