Ingredients

Light as a feather, delicate, lightly sweet. Just perfect, if you ask me. I wasn't even scared off by the huge amount of butter in the recipe. They are truly worth it.

Asia from “Kwestia Smaku” made them with rhubarb, but I was in the mood for a farmer's cheese filling. I can still taste that wonderful flavor today.

You can make them ahead of time, warm them, freeze them and thaw them slowly, then reheat them wrapped in aluminum foil. I'm sharing the recipe with my own changes.

Brioche buns with farmer's cheese

Instructions - brioche buns with farmer's cheese:

It's best to make the dough the evening before baking. Mix the yeast with the warm water and set aside for about 10 minutes, until it gets going (starts to foam).

Sift the flour into a bowl, add the yeast, sugar, salt and 3 eggs, then mix on low speed. Add the remaining eggs one at a time, continuing to knead until the dough is elastic. This will take about 10-15 minutes. Gradually add the butter in small amounts. As soon as the previous portion of butter has been worked into the dough, add the next one. The dough may seem too runny, but that's how it's supposed to be. Cover the bowl with plastic wrap and set it in a warm place to rise for about 2 hours, until the dough doubles in size. Punch the dough down with your fist to release the air, then put it in the refrigerator overnight.

In the morning, take the dough out of the bowl, dust your work surface with flour and shape the dough into a ball, then divide it into 16 pieces. Flatten each one slightly and place on a baking sheet lined with parchment paper. Make a small indentation in the center of each one with the bottom of a glass or with your palm. Cover with a kitchen towel and let rise for ½ hour or longer.

Mix the mascarpone with the farmer's cheese and sugar until you have a smooth mixture (you can add a little butter). Spoon it onto the center of the buns. Put marmalade on top of the filling. You can brush the buns with beaten egg.

Preheat the oven to 190°C (375°F) and bake for about 20 minutes, until the buns turn golden.

Enjoy!
