I don't know about you, but when I make a cake with fruit, I usually put in a lot of it. I like it when there's so much fruit that you can really taste it. There can be just a little bit of cake. I like baked apples too, in fact I like them a lot. You can't imagine how happy I was when Bajaderka shared her recipe for Bratapfelkuchen, or baked apple cake. And how happy my kids were when they each got one whole serving. To my amazement, the apples and the cake disappeared in a few minutes. I highly recommend it.

The liquid left over from cooking the apples can be served as a compote :)

How to make Bratapfelkuchen, or baked apple cake:

Preheat the oven to 175°C (350°F).

Peel one lemon in a thin, single strip so the peel stays in one piece. Zest the other lemon, then squeeze the juice from both.

Pour the water, apple juice and Cointreau into a saucepan, then add 125 g sugar, the cinnamon stick, the lemon juice and the whole piece of lemon peel. Cook over low heat until it comes to a boil.

Meanwhile, peel the apples and cut out the cores, then add them to the saucepan and cook, covered, for about 10 minutes. Take them out and let them cool.

Grease a 26 cm springform pan or small ovenproof dishes and dust them with flour. Grate the marzipan and mix it with the apricot jam until you have a smooth mass.

Put the butter, 125 g sugar, vanilla and grated lemon zest into the bowl of a mixer and beat until the butter is combined with the other ingredients. Scrape down the sides of the bowl, then keep beating, adding the eggs one at a time and beating well after each.

Sift the flour with the baking powder and, while continuing to beat, add it to the batter alternately with the heavy cream. Pour the batter into the pan.

Stuff the apples with the marzipan mixture, place them on top of the batter and sprinkle lightly with cinnamon. Bake for about 50-60 minutes, or until a toothpick comes out clean. Dust with powdered sugar before serving.

Enjoy!
