I hope you'll forgive me another asparagus post, but I just can't help myself with so much asparagus everywhere. It's so tempting. This time I made an asparagus salad with tomatoes. Simple, tasty, quick, but not quite ordinary thanks to the wonderful asparagus. I really love white asparagus with curry, so I added a little, but you can leave it out.
Be sure to check out my other asparagus recipes. I've already collected quite a few :)

Asparagus salad with tomatoes
Instructions - Asparagus Salad with Tomatoes:
Peel the asparagus, cut off the woody ends, and slice into 1 cm pieces. Heat the olive oil in a skillet, add the asparagus, season with salt, pepper and curry, and sauté until nicely tender.
Meanwhile, wash and dry the lettuce. Cut the tomatoes in half, peel the onion, halve it and slice it very thin. Tear the ham into smaller pieces. Mix all the dressing ingredients together and season to taste.
Toss the lettuce with the tomatoes, ham, onion and asparagus, pour the dressing over, toss again and serve.
Enjoy!

Your salads are delicious, and you can really dig in, since it's the season for fresh produce now, and we love asparagus!
Delicious, exquisite salad ;)!
Light spring salads… and everything feels lighter :)
I love asparagus, so I forgive you :-) Especially since in Germany it's hard to get away from it. I was in Berlin recently, and everywhere you turn there are beautiful asparagus, though not cheap…
True, asparagus isn't cheap (especially this year), but you can buy it almost everywhere. Not far from me, by the street, there are two asparagus stands that tempt me, and I "have to" eat it almost every day ;)
