Ingredients

Grilling season has begun, and so has the search for side dishes to go with grilled meat. Polenta with stewed tomatoes is not only a great side for meat, but also for fish and plain sausages. It's also perfect with a slice of good bread. The most important part of the whole dish is the tomatoes, which should be ripe, fragrant, the best you can find.

Before I get to the recipe, though, I'd like to draw your attention to a new feature on the blog. You can now easily ask me questions, and not only me. Just click "ask a question" at the top right of the page and type in your question. Since I'm not a culinary expert and I'll probably be learning from the questions myself, any logged-in reader of the blog can answer. The feature is still under construction, but it works. Come check it out :)

Instructions – Polenta with Stewed Tomatoes:

Mix the broth, milk, and ¼ tsp salt in a pot and bring to a boil. Add the polenta and cook it for about 15–20 minutes, stirring from time to time.

Toast the pine nuts in a dry skillet until golden and smelling delicious.

Heat the oil in a skillet, add the washed tomatoes and the rosemary sprigs, and cook the tomatoes, shaking the pan from time to time, until they start to burst. Pour the balsamic vinegar over them and season with salt, pepper, and a little sugar.

Stir the Parmesan into the polenta. Divide it among plates, top with the tomatoes, sprinkle with the pine nuts, and serve.

Enjoy!
