A perfect Easter cake for a lamb or bunny mold. Like a babka (Polish bundt-style cake): easy, fluffy and cinnamony.

Ingredients

In my family home, we never made cakes in lamb- or bunny-shaped molds. Cakes like that never appealed to me, either. My kids, however, kept asking me whether we would have a little lamb, so when I saw the mold, I just had to buy it. That's how the lamb and the bunny came to be yesterday, made together with my younger daughter Gabriela. She was thrilled that she could help Mommy. In the end, she was just waiting for me to cut off a piece so she could try how it tastes :) We even managed to film the impatient little one. Please forgive the mess in the kitchen, but I was doing several things at once and in a hurry, and sometimes that's just how it looks :) The video itself is veeery short :) Meet my little one:

The cake is similar to a babka (a Polish bundt-style cake). It's easy to make, and it tastes fluffy and cinnamony. The orange juice and the orange glaze give it a lovely aroma. I'm curious how long our lamb will last on the table as a decoration :)

Bunny for Easter

This batter is enough for a mold with a capacity of 1 l.

Instructions:

Mix all the flours with the baking powder and cinnamon, and sift.

In a bowl, mix the oil, sugar, vanilla sugar, 1 tbsp of orange juice and a pinch of salt. Add the eggs and mix. Add the flour mixture and mix well.

Preheat the oven to 180°C (350°F). Grease the mold thoroughly with fat and dust it with flour. Pour in the batter and close the mold tightly. Bake on the lowest rack for about 40 minutes. Take it out and let it cool in the mold. Mix the remaining orange juice with the powdered sugar to make a glaze. Remove the cooled cake from the mold and brush it with the glaze. Decorate as you like.

Enjoy!

I was planning to bake one this year too, but I don't have a mold. The neighbor I used to borrow it from moved away, and online the prices hover at over 60 zł… But your lamb and bunny are adorable! They'll look beautiful on the Easter table and delight your guests.

The molds really are expensive. I got mine totally by accident at Lidl. I grabbed the last one. There were 2 in the package, a lamb and a bunny. My kids are already petting the lamb and waiting for Easter.

I bought a lamb mold two days ago at Carrefour in Kraków, but I think chain stores probably have similar stock. It cost under 20 zł.

Beautiful little animals :) I'd probably feel too bad to eat them, they're so cute :) Warm greetings!

Too bad I won't have time to buy this mold now, because I would have baked one too. :)
