My suggestion today may not be an ambitious one, requiring big preparations and sacrifices in the kitchen. But sometimes we forget, needlessly, about the simplest ways to make a tasty dessert. Sometimes, too, a favorite cake doesn't turn out and we need something sweet in a hurry. Wafers with dulce de leche are exactly that kind of dessert. It's also a solution for busy people who can't afford to stand by the oven waiting for the base of, say, a mazurek (a flat, sweet Polish Easter cake) to bake. And that's right, you can use these wafers to replace the Easter mazurek, too. You just need to decorate them appropriately for the occasion.
Wafers layered with dulce de leche
If you need it to be really quick, just buy ready-made dulce de leche (in Poland called masa krówkowa, after the krówka fudge candy), blend it with about 70 g of butter (not strictly necessary, but the filling will be creamier), and spread it between the wafers. I also like to layer the dulce de leche with currant jam to cut the very sweet taste of the filling. Then wrap the layered wafers in plastic wrap and weigh them down with something heavy, like a thick book or a pot. Wait about 30 minutes so the wafers stick together well. You can skip this step, but then the wafers may slide apart when you cut them.
If you can't get ready-made dulce de leche, just buy sweetened condensed milk in a can and boil it (unopened) for about 3 hours, making sure the can stays covered with water. Let it cool, beat it with butter, and spread it between the wafers. Of course, then it's not the quick version anymore.
I suspect this is my last post before Easter, because I've finally started my own preparations too, and afterwards I plan to fully indulge in all the goodies and spend my free time with my family.
SO I WISH YOU A DELICIOUS EASTER, LOTS OF SUN AND WARMTH, AND A SOAKING WET ŚMIGUS-DYNGUS (the Polish Easter Monday water-splashing tradition)!!!
P.S. How do you like the hare made by Louisa? (In the background, a piece of another masterpiece by Gabriela.)

I like waffles like these, you can make them quickly and layer them with whatever you have in the fridge, like jam, chocolate, or you can cream butter and sugar together for a filling, and you can pour chocolate over them that's also made quickly. I can share how: melt 1/2 a stick of butter, add 2 tablespoons of cocoa, set it aside, add a tablespoon of sugar, and once it cools, crack in a whole egg and mix with a fork, vigorously, and it's done. Pour it over the cake. Merry Christmas, Basia, to you and your whole family.
That's true, it's a quick dessert :) Thank you for the simple chocolate recipe and for the wishes. Same to you ;)
A simple and quick dessert. Kids love it. I remember ones like this from childhood, layered with buttercream and jam and chocolate. And pressing them down under volumes of the encyclopedia, and waiting impatiently for Mom to cut them :)
