Simple, quick and tasty. Yet another version of potato-zucchini pancakes.
I found the recipe in a German magazine, but I've been making these pancakes very often for a long time already.
zucchini pancakes with salmon
Ingredients:
- 500 g potatoes
- 2 young zucchini
- 1 shallot
- 2 eggs
- 6-8 tbsp all-purpose flour
- salt
- pepper
- 2 tbsp oil
- 150 g crème fraîche
- zest and juice of a lime or lemon (organic)
- sugar
- 1 tsp chopped chervil
- 200 g sliced cold-smoked salmon
Peel and wash the potatoes. Wash the zucchini. Peel the shallot. Grate everything on a grater. Add the eggs, flour, salt and pepper. Heat the oil in a pan and fry small pancakes until golden.
Mix the crème fraîche with the scalded, grated lime zest and the juice, then season with salt, pepper and sugar. Add the chervil.
Stack the pancakes, place the salmon and the sauce next to them, and serve.
