Ah, that was so good. I love it when Sunday breakfast is this lazy and this pleasant. To my question "what's for breakfast today?" I once again got a unanimous answer: "WAFFLES!!!". And truly, we hadn't had waffles in a long time, let alone good ones. I'm glad I felt like making them, lazy, still sleepy and in my pajamas, because they turned out to be the best waffles I've ever made. Just take a look at the ingredients. These waffles were incredibly aromatic and crispy, just the way they should be. Now I finally have my favorite recipe, and all I'm missing is a better waffle iron :)
Waffles with Caramelized Bananas
I'm also glad I discovered another source of inspiration, because thanks to it the whole family had a delicious, lazy Sunday breakfast :)

Directions:
Put the dry ingredients together in a bowl and mix. In a separate bowl, mix the buttermilk, honey and egg yolks, then add it all to the dry ingredients and mix. Add the melted butter as well. Beat the egg whites until stiff, but still slightly sticky, then gently fold them into the batter.
Cook in a very hot waffle iron, lightly greased with oil. Be careful, the batter rises a lot as it bakes!
Serve with caramelized bananas:
Melt the butter in a saucepan or skillet, add the sugar and cook until the ingredients come together. Add the orange zest. Cut the bananas into thick slices and stir them in. After a moment, pour in the cream and stir until the sauce thickens. Be careful, though, that the bananas don't fall apart. Serve over the waffles.
Enjoy!
Additional notes:
- These waffles can be made even the evening before and stored in the fridge, wrapped in plastic wrap. After taking them out of the fridge, reheat them in an oven preheated to 150°C (300°F) until they are crispy again
- While making these waffles, I kept the finished batch in an oven heated to 100°C (210°F), on a wire rack, so I could serve everything at the same time
- These waffles will be even better served with vanilla ice cream
- You can replace the bananas with apples or pears
Inspiration: BonAppetit, though I changed the recipe a bit.
