Hello again, and sunny greetings once more! It looks like summer came back for a day. Yippee!
Today I'm sharing another recipe from my dinner menu. It's a simple and super tasty (how could it be otherwise?) salmon, prepared with young garlic and served with a tomato sauce. Since I didn't have any young garlic, I used fennel and 2 cloves of garlic instead (on the author's advice).
The recipe comes from Jamie Oliver ("Jamie," July/August 2011 issue).
Directions:
Slice the young garlic thinly. If you're using fennel and garlic cloves instead, slice the fennel and finely chop the garlic. Heat the olive oil in a pan and fry the garlic with the fennel until caramelized. Add the crushed tomatoes (I crush them with my fingers) and cook until softened.
Heat some oil in a second pan and fry the salmon skin side down for about 3 minutes, then flip it and add the lemon slices. Fry for another 2 minutes.
Add the chopped dill and the mint leaves to the tomato sauce. Place the salmon on plates, spoon the sauce over it and serve.
Enjoy!

Maggie, exactly. Sometimes I think I'm boring with this whole Jamie thing, but I can't help it when I see a simple recipe for something delicious :)
