Lately I've been slacking on my baking. During the week I have no time for it at all, so weekend baking is all I have left. That's why I'm so happy that I have today off and can hang out in the kitchen making something tasty. Last weekend I had to whip up something fast, so I took the total shortcut. What came out was a really interesting and simple dessert, although next time I'll use shortcrust dough.
Plum Tartlets
See for yourselves:
Directions:
Preheat the oven to 210°C (410°F).
Prepare the pudding according to the package directions, but use only 400 ml of milk and no sugar (unless the plums aren't very sweet or you like really sweet desserts), and set it aside.
While the pudding cools, wash the plums, cut them in half, and pit them.
Cut the puff pastry into 6-9 rectangles of equal size and place them on a baking sheet lined with parchment paper. Fold the edges of each one up slightly to form a rim. Spread an equal amount of pudding on each piece and arrange the plum halves on top, cut side up. Sprinkle with sliced almonds and put them in the oven. Bake for about 20-25 minutes, or until the pastry is nicely browned. Take them out of the oven and serve right away. Optionally, you can brush them with warmed apricot jam.
Enjoy!

Puff pastry is the best idea exactly when we don't have time for more complicated baking. And in your version with plums it looks so delicious :)
