There are days in my kitchen when I have no idea what to make. It's even worse when I don't have the ingredients to make anything at all. One of those days came along and I had to improvise. Luckily, I found a few ingredients that I could turn into a tasty casserole, and it disappeared quickly, even though this dish is definitely not diet food.
If you're not afraid of calories, you can also top the casserole with slices of mozzarella. You can also add diced ham.
pasta and cauliflower casserole
Directions:
Cook the pasta al dente. Wash the cauliflower, break it into small florets and cook them al dente as well (I steamed mine), then mix with the pasta.
Mix the sauce ingredients (except the almonds) together, pour the sauce over the pasta and cauliflower, stir, and transfer to a baking dish. Bake for about 30-40 minutes at 170°C (340°F).
Meanwhile, toast the sliced almonds in a dry skillet until golden. Sprinkle them over the casserole and serve.
Enjoy!
