I admit I had a hard time figuring out what to call today's dish. It's a little celery root creation that goes perfectly as a side dish with meat.
It's a simple vegetarian dish made from a vegetable that I think is a bit underappreciated. I usually use celery root in soups or in salads. Roasted/braised celery root becomes sweet and tender. It also works perfectly as a side for mashed potatoes.
The celery root in the version I'm sharing today is tender and slightly sweet, and it draws you in with its herby, garlicky aroma. You can leave it in cubes or blend it into a purée. I prefer it diced or cut like fries, though.
The recipe comes from Jamie Oliver's "Genial kochen mit Jamie Oliver"
celery root with thyme
Instructions:
Wash and peel the celery root. Cut about 1 cm off the bottom and stand the root on it (this makes it easier to cut), then slice it and cut the slices into 1 cm cubes. Heat a skillet or saucepan well and pour in about 2–3 tbsp olive oil, then add the celery root, thyme and finely chopped garlic. Season with salt and pepper, stir, and fry for about 5 minutes, until the celery root takes on some color. Reduce the heat, add the water or broth and simmer, covered, for about 25 minutes. If you like, mash it into a purée and serve.
Enjoy!
