Nectarines Pan-Fried in Caramel with Vanilla Ice Cream

A quick dessert of nectarines pan-fried in caramel with rosemary and Cointreau, served warm with vanilla ice cream.

Nectarines are still available in the store, so I used them for one more quick dessert. It's perfect for those moments when you're craving something sweet. It tastes best with vanilla ice cream, especially when the ice cream melts a little and mixes with the caramel sauce. Rosemary gives this dessert a slightly more pronounced flavor. You can also replace it with mint.

Instructions:

Wash the nectarines, remove the pits, and cut each one into 8 or more pieces. Caramelize the sugar in a dry skillet, then add a tablespoon of butter and the rosemary. Add the nectarines and coat them well in the caramel, then pour in the Cointreau and cook until the nectarines are well coated with the sauce and have softened slightly. They shouldn't turn mushy, though.

Divide among serving dishes, spoon the sauce over the top, and serve while still warm.

Enjoy!
