I just can't resist pumpkin recipes. I have so many inspirations and ideas… The worst part is that this year I'm really drawn to sweet pumpkin. There's only one new savory dish I've made, but its time will come. So for now, pumpkin cookies and cupcakes rule.

I couldn't resist these cookies either, especially since I had some leftover peanut butter that I didn't know what to do with (I don't like it :)) and some pumpkin puree that was already waiting in the fridge with its last bit of strength to be used.

And the cookies? Delicious! The outer layer is a bit like a brownie, beautifully chocolatey, and the inside is wonderfully orange, delicately pumpkiny with a hint of peanut butter. On top of that, they're very easy to make. I highly recommend them!

One more note: instead of maple syrup, I used equal parts molasses and honey.

Instructions – Inside-Out Chocolate Pumpkin Cookies:

Mix the first 5 ingredients together well. Then add ingredients 6 through 9 and knead into a soft dough. I had to add more flour because the dough was too sticky. It should be soft, almost runny, but not sticky. Put it in the refrigerator.

Meanwhile, in a second bowl, mix the remaining ingredients for the filling.

Preheat the oven to 180°C (350°F).

Form 14-16 balls from the dough and flatten them, then place a teaspoon of filling on each one. Pinch the edges of the dough together and gently roll them back into balls. Place them on a baking sheet lined with parchment paper and bake for about 10 minutes. They may seem a bit underbaked when you take them out, but they should sit on a wire rack to cool so they can "set" too. You can sprinkle them with powdered sugar.

Enjoy!

    Awesome cookies :)

I'd make them, but I'm afraid they might come out underbaked.

No need to worry. They'll turn out fine, and if you want to be really sure, just bake them 2-3 minutes longer (it won't hurt). They also keep "setting" while they cool. Also, try to make the layer of dough as thin as possible.
