There's nothing more annoying to me than missing an important ingredient right when I get a craving for something tasty. This time I wanted to make a delicious salad (recipe coming soon), but I was out of mayonnaise. Well, of course, I hardly ever use mayonnaise, so why would I have it in my fridge?! At first I was frustrated and upset, but then I thought: if amateurs on TV can whip up mayonnaise, so can I. And I did, and I'm happy about it, because it's not as hard as I thought.
homemade mayonnaise
Maybe someone else will suddenly crave mayonnaise, just like I did. Maybe someone will find this recipe useful. It's really not that difficult. You can whip it with a mixer, but also by hand with a whisk (which does take a bit of arm strength). You can add paprika powder, garlic, curry, mustard, or horseradish to it.
Instructions:
Scald the eggs with boiling water. Put the yolks in a bowl, add a pinch of salt, and whisk well with a whisk or a mixer. The yolks should become fluffy. Then slowly, stirring constantly, add the oil one drop at a time or in a very thin stream. When the sauce thickens, add the lemon juice and keep adding the oil. Now you can also increase the stream a little. Keep whisking until all the oil has been added and you get the right consistency. At the end, season the mayonnaise with salt, pepper, lemon juice, and sugar. You can add some mustard to give it a sharper taste.
Enjoy!
Additional notes:
I don't recommend using olive oil, because mayonnaise made with it can taste bitter.
The eggs should be very fresh.
If you want the mayonnaise to be even fluffier, you can replace one of the yolks with a whole egg.

Well, it's definitely heaps better than the store-bought kind!
And what a pretty, golden yellow color ;]
I've never made mayonnaise myself. I never had the courage. And I don't know if I ever will. But I'm saving your recipe just in case, if I ever get stuck with the misery of no mayo in the fridge and the courage to make it suddenly hits me :) It looks really appetizing. Definitely better than the store-bought ones. At my place it would probably be the version with mustard, because we like our mayo on the spicier side.
Basia, I make mayonnaise often, sometimes with just 1 egg yolk, and I add mustard and a clove of garlic, which is a must. It always turns out for me. At the end it's good to add a teaspoon of boiling water, and it will turn out lighter in color. This kind of mayo has no preservatives, so you need to use it up quickly.
