I like to clean the apartment before going on vacation, so I can enjoy a tidy home when I get back. So I'm taking advantage of the kids being away and going wild :) I can also let loose in the kitchen, because I have more time and more freedom (the kids don't eat everything). This green pea soup with mint was born last weekend, when I realized there were way too many young peas sitting in my freezer. The result is a tasty, light soup that can be served either warm or cold. What matters, though, is to use a good broth that's low in salt and sweet young peas.
Green Pea Soup with Mint
I wish you happy cooking, and I'm counting down the days to my vacation…
Instructions – Green Pea Soup with Mint:
Melt the butter in a pot, add the shallots and garlic, and cook over low heat until translucent. Add the peas, half of the mint, the broth and 1 cup of water, then cook until the peas are tender. Blend until smooth and season with salt, pepper, a little ginger and the lime juice.
Whip the cream, stir in the lime zest and season with salt and pepper.
Ladle the soup into bowls, top with a dollop of cream and the remaining mint, and serve.
Enjoy!
