Focaccia with Tomatoes and Parmesan

An even more colorful and tasty focaccia. This aromatic bread is perfect as a side dish for grilled meats.

Focaccia with tomatoes and Parmesan

Some time ago I shared a recipe for focaccia with herbs and olives. This time I'd like to show you another version of that focaccia. It's not a new recipe, just different toppings and add-ins, so for the ingredients and instructions I'm sending you to the previous focaccia post. But the change made this focaccia even more interesting and tastier :)

Here's what I changed: I added chopped shallots, a clove of garlic and grated Parmesan (about 30 g) to the dough. I kneaded the dough and shaped it into flatbreads, then pressed a few cherry tomatoes into each one and sprinkled them with my favorite herbs: thyme, basil and oregano. I baked them on the grill, just like last time.

And with that simple recipe, I wish you a lovely, sunny weekend and great grilling weather!

They look so delicious and tempting! I don't know why I don't make yummy things like this, since I always swoon over them ;)

Thank you. I really like them. They're not hard to make, and they're a great way to liven up the often boring grilled dishes. Maybe it's finally time for you to make them yourself? ;)

Sis, what if I add sun-dried tomatoes? Would that work? Or are cherry tomatoes better?

  • flowerekAuthor

Of course sun-dried ones will work, but the best are the ones packed in olive oil. If you don't have those, pour olive oil over them a few days ahead so they soften.

I made a simplified version with sun-dried tomatoes and mixed everything into the dough right away, and it rose too and they're incredible. Yum, yum, yum!

I'm so glad, Asia, that you liked them, and that they can be made even more easily :)
