Yesterday I had a meeting at my daughter's daycare, and I felt like bringing something along. Something not sweet, so people could nibble on it in between. I wasn't really surprised that these cookies vanished in an instant. They are just so good, and addictive! I was immediately asked to share the recipe.
These cookies are crumbly and delicate, perfect for a get-together with friends over beer, or simply as a savory snack. They are definitely healthier than chips, and even tastier.
Crumbly cheese cookies
The recipe is inspired by a Dutch recipe from Frau Antje.
Directions:
Briefly mix together the flour, butter, egg, sour cream, salt, and paprika to taste. Just enough to get a firm dough. Shape it into a ball, wrap it in plastic wrap, and put it in the fridge for a few hours or even overnight. I didn't have time for that, though, and went straight to baking, and the cookies were still crumbly and tasty.
Roll the chilled dough out to a thickness of about 5 mm and cut out cookies. Arrange them on a baking sheet lined with parchment paper and brush them with a mixture of the egg yolk and cream. Sprinkle with the toppings or place a (peeled) almond half on each one, and bake at 200°C (390°F) for about 10-15 minutes.
Enjoy!

I just made the cookies using your recipe – they're delicious ;) Unfortunately I was a little late taking them out of the oven, so here and there you can taste some burnt cheese (I think I also put too much into the dough, so they're more like "cheesies" than cookies), but they're still really good, and I hope they disappear from the table quickly ;)
I think there's a mistake in the recipe – the cheese is in the ingredients for the dough, but then you don't mention it later – unless I misunderstood something? ;)
I'm glad you liked the cookies. I hope they disappeared quickly :) Thank you for pointing out the mistake. I'm fixing it now. Of course, the cheese should be kneaded in together with the dough.
