They taste like apple cake, but in cookie form they're more delicate and just right for eating out of hand.
These aren't my own cookies. Unfortunately I don't know who came up with them, but they're delicious.
Instructions:
Peel the apples, cut them into small cubes, and sprinkle them with one packet of vanilla sugar and some cinnamon. In a bowl, cream the butter with the sugar and the second packet of vanilla sugar, then add the eggs one at a time, continuing to mix. Combine the flour with the baking powder and 1/2 tsp cinnamon, then add it to the butter mixture. Mix everything together, add the apples, and mix once more (the apples don't need to be tightly bound into the dough). Line a baking sheet with parchment paper and, using two spoons, shape small cookies about 1 cm high. Place them in a preheated oven and bake for 20 minutes at 200°C (400°F). Sprinkle the finished cookies with powdered sugar.
Enjoy!

Really great dessert :) Wouldn't you like to enter it in the dessert recipe contest on my blog? You can win an oven and a weekend for 2 in Warsaw. You can actually submit 3 desserts, but in separate comments. I hope you won't be upset that I'm adding a link – just delete this comment if you want :)
