Another dish in my series of simple midweek dinners. The inspiration for these fritters came from ones served at my workplace. The kids devour them and I really like them too, so I decided to make them myself. I have to admit I managed to make almost perfect fritters, delicate and tasty, and on top of that I know for sure they contain none of the unwanted additives that are often used in big kitchens.
Cauliflower fritters
These fritters can be a dish on their own, but they also work as a side with meat and fish. You can also skip the peas and carrots and swap the cauliflower for broccoli. I wanted mine colorful though, and the kids loved that.
Cauliflower fritters
Instructions:
Wash the vegetables, peel the potatoes, divide the cauliflower into florets and cut the carrots into large pieces. Then cook the vegetables so that they don't get overcooked (steaming is best). Drain the cauliflower and mash it with a potato masher. I didn't mash it into a purée, but just enough so that pieces of cauliflower were still visible. Cut the potatoes and carrots into a small dice and mix with the remaining ingredients. It's best to start with less flour and add it slowly, because the amount you need depends on how much water the cauliflower holds and how big the eggs are. I started with 7 tablespoons and ended up with 10. Season with salt and pepper (you can also add a little dill or nutmeg) and fry in oil on both sides until golden.
Serve with yogurt sauce mixed with lots of dill.
Enjoy!
And on Friday, come back for a tasty cake :)

Oh, I've never tried these kinds of fritters. I'll definitely give them a try one of these days, because they look really appetizing :)
You're very welcome, and thank you :)
It's been so long since I last had cutlets like these, you reminded me of my college days, that's when I used to make them :)
I didn't know fritters like these even back in college. Too bad, because they're tasty :)
Great idea for cauliflower, I love this veggie, but with breadcrumbs it was starting to get old for me, I absolutely have to try this version :)
I'm actually always looking for ideas for cauliflower. These fritters are definitely not boring. I'd also recommend a cauliflower and pasta casserole http://flowerek.com/warzywa/zapiekanka-makaronu-kalafiora/
I think it's a great dinner for Friday ;)
I bet they taste good any day of the week, but they really could come in handy on a lazy Friday :) Enjoy!
where can I buy this crème fraîche, or what can I substitute for it? :)
You can buy crème fraîche in any larger store. Or you can substitute thick cream. Thick sour cream works fine for these fritters.
