I haven't been feeling too well lately, which unfortunately shows on my hips, because I comfort myself with sweets. On top of that it's getting cold, and when it's cold, I reach for sweets. Do you do that too? Luckily I don't have time to bake during the week, otherwise I'd probably bake cakes every day and devour them in huge quantities. For now I bake on weekends.
Apple cake with coconut meringue
Recently I baked this apple cake and we really loved it. Next time I'll replace the apples with pears.
Apple cake with coconut meringue
Instructions:
Line a round 26 cm pan with parchment paper. Preheat the oven to 180°C (350°F).
In the bowl of a stand mixer, mix the butter, sugar and vanilla extract, then add the eggs one at a time, waiting until each one is incorporated into the batter. Add the flour, baking powder and potato starch and mix, and finally mix in the plain yogurt and the orange liqueur. Once everything is combined, spread the batter in the pan.
Peel the apples, cut out the cores and slice them into thick slices, then arrange them fairly thickly on top of the batter. Place the pan in the oven and bake on the second rack from the bottom for 30 minutes.
Meanwhile, whip the egg whites with the sugar, and at the end add the shredded coconut. Spread the meringue over the partly baked cake and bake for another 20-30 minutes. Set aside to cool, remove from the pan, and sprinkle with powdered sugar before serving.
Enjoy!

I know it, I know it, and I really like it :-)
Warm regards!
Mine turned out gooey and underbaked :( First time… And I baked it quite a bit longer than the recipe says. Such a shame, I was really craving a szarlotka and this one looked so appetizing :(
I'm so sorry, Magda :( What kind of apples did you use? The kind that cook down, or firm ones? Maybe you used too many? I really hope the failed cake didn't ruin your Sunday. Best wishes
