I can't believe I've already written so many posts. I only started this blog not long ago! I'm so happy that other people visit my blog, that you leave comments (they really motivate me to keep writing), and that the number of fans on Facebook keeps growing. I hope my future recipes will encourage you to try them and inspire you to cook delicious food.
When I saw this recipe from Kasiiii24, I knew I had to make this cake right away. It's a memory from my childhood. A taste I will never forget. I can hardly believe that I haven't made pleśniak (a Polish crumble cake with fruit and a meringue layer) for so many years. In our house we called it zapleśniak. I realized that I more often make new, often complicated cakes that don't always taste good or turn out well, instead of the old, tried-and-true ones. I keep coming back to this recipe and I'm sure I will keep coming back to it.
Pleśniak with currants
When I made the cake in the photo, it was still winter, so I used frozen currants. Now I can bake pleśniak with fresh fruit. Basically, all summer fruits go well with it: currants, gooseberries, raspberries, blueberries, and when fresh fruit runs out, you can use jams.
Instructions:
Combine the flour, butter, vanilla sugar, ½ cup of the sugar, baking powder and egg yolks in a bowl. You'll get a kind of crumble. Pour 2/3 of the mixture into a springform pan (28 cm) greased with oil and press it down to form the bottom crust. Put it in the refrigerator for about 15 minutes. Spread the fruit over the crust. Beat the egg whites until stiff, and toward the end of beating add a cup of sugar. Spread the meringue over the fruit and sprinkle the remaining crumble on top. Bake for 45 minutes at 190°C (375°F).
Enjoy!

I'm so glad you like the cake, but most of all, congratulations on your 200th post :) Keep it up :) Fingers crossed for you :)
It looks heavenly
Congrats on your perseverance ;).
Pleśniak is my childhood taste too, except that usually they'd add cocoa to about 1/3 of the dough, and that was the layer between the fruit and the meringue. I'd love to try that version too ;).
How is anyone supposed to keep their figure :) I'd gladly gobble this up!
it's been so long since I had pleśniak…
Kasiaaaa24 thank you :) It tastes great, really great :)
Klaudia, thanks :) It tastes just as good as it looks :)
Holga, thanks :) I know the version with the cocoa layer too. I encourage you to try it :D
Kura w Rosole, you can't watch your figure when there are so many delicious things around, unfortunately.
Paula, maybe it's time to remind yourself of the taste? I'm glad I made it, because I rediscovered this cake :)
