Cold, gloomy, unpleasant. I miss the snow and the quiet that settles in when big flakes fall from the sky. I'm not a fan of winter, but what I dislike most about it is the lack of snow and the dark days. That's when I think about summer even more often, and about vacations gone by. This time the memories found their place in the kitchen: memories of Spain and its tapas.
This appetizer pairs beautifully with a delicate wine and is perfect with a piece of fresh baguette.
If you don't like tomatoes in winter, you can use a thick slice of goat cheese or baguette instead.
tomato appetizer
How to make the tomato appetizer:
Cut the tomatoes into thick slices.
Peel the carrots and onion and either chop them finely or grate them on the fine side of a grater. Heat the olive oil in a skillet and sauté the onion until golden, then add the carrots and cook them together. Season with salt and pepper, add the tarragon or sage, and simmer until the carrots are soft. Spoon onto the tomato slices and serve garnished with a leaf of sage or tarragon.
Enjoy!
