It's been a bit quiet on the blog lately because some small changes are in the works. My blog is getting a new outfit. Everything is still in the preparation phase and it's taking a while, so please be patient with me. I hope you'll like the “new” blog!

In the meantime, so you don't think I've stopped cooking and baking, I have a timely recipe for you. It's a delicious, moist, tender chocolate cake with pumpkin that smells a little like Christmas. This treat hides pieces of pineapple inside, and on top it tempts you with a coconut-nut topping, which in my case turned out more like a crumble. Nothing but good stuff, right? I probably don't need to persuade the pumpkin and chocolate lovers. And if you're not a big fan of pumpkin, there's nothing to worry about. You can't taste the pumpkin in the cake. It just adds a bit of aroma and the right, slightly moist texture.

Directions:

Preheat the oven to 180°C (350°F). Grease a 20 x 20 cm / 24 x 24 cm pan with butter and dust it lightly with flour.

Beat the butter and sugar until fluffy, then add the eggs one at a time, mixing well. Gradually add the pumpkin puree, the pineapple and the almond extract. At this point the batter may look curdled.

Mix the remaining (dry) ingredients for the cake in a bowl and gradually add them to the butter mixture, stirring with a wooden spoon. Pour the batter into the pan and bake for 25-30 minutes, or until a toothpick comes out clean.
Take the cake out of the oven and prepare the topping: melt the butter in a saucepan, add the sugar and cream and heat, stirring, until the mixture is smooth and the sugar has dissolved. Add the nuts and shredded coconut, remove from the heat and let cool slightly. Spread the warm topping over the still-warm cake and put it back in the oven, under the broiler (the top heating element), for 2-3 minutes, until the topping starts to bubble lightly.

Caution: the topping can burn during this final “broiling,” so keep an eye on it.

Enjoy!
